Lunch



Not really a recipe -- more of an assembly post. Anyway, I like to eat a huge salad for lunch. I find I feel pumped up with vitamins after so many raw and cooked veggies. And I never skimp out on protein and fat ingredients (beans, tofu, avocado, nuts, etc.) Often times, I crave crunch, especially with this heat wave in Portland. Today's offerings included: kale, chopped beets, chopped carrots, dill, raw onion, white beans, pinto beans and wheat croutons. All topped with a garlic vinaigrette. Very crunchy and scrumptious. And humongous. Basically I'm a super-hero after this meal.
