Buckwheat Pancakes



Sometimes I wake up and it's a pancake type of day. I love them in any shape; Micky Mouse, large "L"s (for Leela), or hearts. This morning, I chose the elegant silver dollar shape and they were darling. With fresh apricots and strong tea, I couldn't help but giggle over breakfast.

Buckwheat Pancakes
serves 2-3

1/2 c buckwheat flour
1/2 c plain flour
1 tbsp baking powder
1/4 tsp salt
1 c soy milk
2 tbsp Earth Balance, melted

While mixing your batter, put a griddle pan or any type of large pan on medium heat to get hot enough for your first batch of pancakes. Also, turn your oven to "warm" or its lowest temperature to put the first couple rounds of pancakes in while you're cooking the rest -- obviously you don't have to do this, if you have friends to eat the dear pancakes right off the griddle.

Stir all dry ingredients in a large bowl. Add melted Earth balance and milk and whisk until just combined. A few lumps of flour are okay. Spray or lightly grease pan and put a heaping tbsp of batter on pan to make silver dollar shapes. Wait till cakes start to bubble to flip.

Serve with fruit, nuts, syrup -- whatever you like.
