I'll have the gravy

Sunday late lunches are one of my favorite meals . . . It feels so nice -- kinda how I imagine a big Southern family does after they come home from church. My Mom has many stories about this type of thing, being from Mississippi and all (the first state to secede from the Union, my mama recalls). Catfish, greens, bacon -- my menu has changed, but the sentiment -- the desire for comfort and family has not. This last Sunday was a gray one and the fiance and I did a massive Spring Cleaning attack on our ole house. Nourishment had to be provided for such busy little bees. And it was. To the tune of roasted yellow cauliflower and broccoli, veggie sausage (Wildwood brand--so tasty!) and mushroom gravy . . .

For the Gravy:
1 can coconut milk
1/2 onion, chopped
1 small bag of mixed dried mushrooms
1 tsp thyme
1 tsp oregano
3 garlic cloves, minced
salt and pepper to taste
olive oil

First, cover the dried mushrooms with boiling water and cover for approximately 10 minutes (until re hydrated). Chop the mushrooms into small bits. Saute the onion in a generous glug of olive oil (about 5 minutes), until they start to sweat. Add all remaining ingredients and allow to cook on medium heat about 8-10 minutes. The gravy will reduce a little and smell delicious. Lastly, put the mixture into the blender, or use a small immersion blender (I have one of these, very useful for sauces and soups) and puree until smooth. It'll be nice with a few chunks of mushroom. Slather this sauce all over your greens, broccoli, rice, potatoes, whatever you like -- it's good on everything!

The food looks decicious...the facts ned to be right. SC left the union on December 20 1860, Mississippi on January 9, 1861.
