The Kitchn is completely dedicated to soups this week. Is there honestly a better topic, especially living in the Northwest and facing Fall/Winter dead in the eye?! I LOVE soup, and believe it's hard to make a really good one . . . So when I came upon this recipe for curried carrot coconut soup, I was floored. It's just so good. And with a little modification, could be a superb curry base to add in more veggies and serve with rice!
I looove curried soup but never tried it with carrot soup! I will now!
