What could this complex system of small notes, lots of hooks, an aged wooden board, 2 hosts, busy servers whizzing by with mountains of plated seafood, another guy yelling command and all located in a circus like structure in the middle of Mercado Central be? The ordering system at El Pacifico Restaurant. It was a tornado of food and action over there. And when the commanders of the wooden hooks said yes to me visiting with them, inside of the power tent -- we were INSIDE of Hal's head, I nearly died with joy. Such fun! Love organizational protocols in other countries!
