Amazing Vegan Holiday Class

The locale of the class -- Cleveland High in SE Portland -- the Fall is still splendid here in Portland.

I had the wonderful opportunity to participate in a Holiday Vegan Cooking Class. This class was put on by the lovely and very talented Jess and Chelsea through the tryvegan, an organization that creates fun/delicious vegan events. I met some really nice folks, laughed at the punchy wit of our hostesses, observed demos and got my hands dirty with all sorts of pie dough, sweet potato mash and stretchy wheat gluten.

The menu we created consisted of the following:
wheat gluten celebration roast -- SO GOOD!
sweet potatoe casserole -- veg butter/pecan/brown sugar bomb of heaven
and pecan pie -- haven't had a slice of this since my days traveling through Mississippi as a kiddo

All of the items were re-imagining Thanksgiving/Autumnal favorites. I must admit, each dish had delicious and familiar flavors -- nothing too exotic . . . which is just how these dishes should be! It was a great afternoon and I look forward to the next event.
