power lunch
For our final game of kickball, we needed a healthy and powerful lunch. The roasted potatoes, kale and curried tempeh deli salad really hit the spot -- it left us full of strength and charged with nutrition. Unfortunately, due to intense heat and some poopy calls by the ump, we Thunderchickens lost our last game.
Curried Tempeh Salad
1/2 onion diced
3 radishes sliced
1/2 cucumber
1 pckg. tempeh (12 oz.) chopped into small pieces
sprinkling of fresh herbs
2 cloves garlic minced
1 tbsp. mustard
2 tbsp. veganaise
2 tbsp. apple cider vinegar
1 tsp. cumin
1 tsp. tumeric
1/2 tsp. cayenne
Mix all ingredients into a large bowl -- take care to evenly incorporate all the spices and finish it off with a good pinch of salt and pepper if you like ( I like).
This is a really handy dish to stuff into a pita or on a sandwich or munch on over salad and potatoes as we did today. It's very deli case delicious.
