tea time yogurt cakes

these tasty little cakes are so moist and delicious -- The recipe for these little boys are:

Gateau ay Yaort -- makes 9 cupcakes or one small cake
(adapted from Chocolate and Zucchini cookbook by Clotilde Dusoulier)

-preheat oven to 350
1 1/2 tsp egg replacer (mixed w/ 2 tbsp. warm water)
1/2 c. plain soy yogurt
1/2 c. sugar
1 tsp vanilla
2 3/4 tbsp. vegetable oil
1 tbsp amaretto or rum ( I used amaretto)

scant 1 cup flour
3/4 tsp. baking powder
1/2 tsp. baking soda
good pinch salt
handful chocolate chips

mix all wet ingredients in large bowl, then sift dry into wet. Try to evenly incorporate ingredients just enough -- no overmixing!

place in heated oven for approximately 11 minutes or until the smell is unbearably yummy. Cool on wire rack and enjoy with afternoon tea.

So pure, so simple and spongy. Like a happy little cloud studded with chocolates.
