Classic Currant Scones
Adapted from a recipe by one of my favorite authors, Colleen Patrick Godreau (compassionatecooks.com), these scones were sensational. My slightly different version contains a bit of whole wheat flour and slightly less Earth Balance (in a backwards attempt to make them more "healthful" -- oxy moron when referring to scones, really).
