Summer Apricot Cake





I find the need for cake urgent sometimes . . . Not too sweet, delicate crumb, melting in my mouth, possibly topped with jam, powdered sugar or nude -- fruity for the summer months (although chocolate works year-round for me, it is clear). I have started a summer job at the Montessori I worked at a few years ago -- Lots of new children and old kids who have gotten so much bigger! It is exhausting and fun at the same time. I am wondering if my new brood and I will be able to do any cooking this summer session.

This cake stuck out to me from Molly Wizenberg's book, A Homemade Life, when I first read it months ago. The book is fantastic -- equally charming, endearing, heart-wrenching, comedic and delicious. I got to see the author speak at Powell's and I was completely starstruck, as I get around darling young food writers. She was a great reader, with lots of vulnerability and sincerity. It goes without saying that I am in love with her. And this cake made me even more of a believer.

I made a few adjustments to the recipe, just because I didn't want to go shopping -- it was still perfectly yummy, tender and flavorful!

* I made a few substitutions --
ground pecans for pistachios
hazelnut milk for whole milk
honey for sugar

So nice with a cup of tea or glass of hazelnut milk -- anytime of day, really!
